Easy Eggs on Toast
A simple dish that you can whip up in no time. Perfectly boiled eggs set atop thin slices of your favorite cheese and freshly toasted bread. Garnish with sprouts, and a sprinkling of salt and chili flakes. So good and so easy! Gluten Free option.

I'm not naturally an early riser. But for years I've tried to convince myself otherwise. The idea of waking up at the crack of dawn, squeezing in a bit of yoga, and sipping on a fresh cup of tea before the others have waken…it sounds like a dream. Unfortunately, when you go to bed as late as I do, the early-rising thing just doesn't happen. I used to make big plans for before my workday started – but come morning, the unrelenting force of my cozy bed usually resulted in any ambition dissipating into thin air. Maybe tomorrow. Because if there's one thing I love more than food, it could be sleep.
That said - there are things that have me scooting out of bed much earlier than usual. Things like early morning weekend hikes or vacation flights at the most ridiculous hours (because, deals). But most regularly, what's been getting me up early on Saturdays is our local farmers' market. Anguel and I discovered it around six months ago – and ever since we've treated our Saturday morning trips as a weekly ritual. No matter how late we go to sleep the night before. There's something so satisfying about handing money over to the dirt-stained hands that picked the very vegetables you're about to eat.
On these Saturdays, breakfast happens after the market. And usually our stomachs' are growling as soon as we walk in the door. Eggs on toast are what we turn to whenever we need a quick bite that's satisfying enough to feel like a meal. And it definitely doesn't hurt that this recipe features all the fresh bounty we collect earlier in the morning: local pastured eggs and cheese from our favorite organic dairy farmer, freshly baked whole grain bread, and peppery little sprouts that are almost too cute to be eaten.
Assembling this recipe is as simple as can be. Toast up thick slices of your favorite bread. Dab them with butter if you'd like. Then top with thin slices of cheese, freshly boiled eggs and sprinkling of fresh shoots. For garnish we like to add fresh black pepper, Himalayan salt and a sprinkling of dried chili flakes for a bit of a kick. And ta-da, just like that, your meal is served. And it doesn't just work for breakfast. I've eaten this for lunch and even dinner too (especially when our fridge is looking a bit sad). It also makes the perfect mid-day snack.
If you already know how you like your hard-boiled eggs cooked, then by all means cook them how you like. For this dish, I prefer the yolks a little soft inside – just near setting. My favorite happens to be at the five-six minute mark, but I never sweat it when my eggs end up a bit over or under. Because this recipe is perfectly not-perfect. And always delicious.
